salads can be so boring sometimes so every so often i like to spruce things up a bit...
today i am having a simple salad of:
chopped romaine lettuce (about one small head)
finely chopped cucumber (1/2-3/4 of a large cucumber)
(*keep the skin on the cucumber for extra fiber!*)
about 1/4 cup of quinoa (cooked)
about 2 tablespoons of tzatziki (store bought)
a spoonful of organic hemp seeds (optional - for extra protein)
dried cranberries (to taste)
mix all ingredients in a bowl, sprinkle some sea salt on top and enjoy!
this salad might seem a little weird at first, but i made it by mistake for dinner one night (i like to throw random things in my salad) and it happens to be delicious!
i would like to wish my little M O good luck on her first real job interview today.
